Crumbs: Banana Zucchini Chia Bread

We had a handful of bananas and a couple zucchini’s that needed to be used up. So here’s our spin on a classic recipe- Banana Zucchini Chia Bread!

What you need: {1 cup bananas (very ripe & mashed!), 1 cup water, 1 cup zucchini (shredded), 1 egg, 1 & 1/2 cups flour (whole wheat, coconut, etc), 1/2 cup coconut oil, 1 tsp cinnamon*, 2 tsp vanilla extract, 1/2 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1/4 cup chia flax seed blend*, 1 tsp bee pollen (crushed)*, 1 tbsp honey**}

*Optional, to taste

**Honey can be added as option. If bananas are very ripe, they will provide a good amount of sweetness.  Ours were VERY ripe and extremely sweet. So I only added a little honey.

What you do: 1) Oil baking dish (bread pan) and preheat oven to 350 degrees. 2) Mix dry ingredients in large mixing bowl. Depending on your taste, add cinnamon, chia and flax seed, and bee pollen- more or less, whichever you prefer. 3) Mix wet ingredients in separate mixing bowl. 4) Combine wet and dry ingredients, mixing thoroughly. 5) Pour mixture and spread evenly in dish and bake for 45-55 minutes (depending on type of dish) or until firm and center is no longer gooey. 6) Enjoy!
